Atheists, why do you trust your beliefs?

If your mind evolved to ensure your body’s survival (which may or may not have anything to do with reality or truth), how can you trust anything you think you know?
Isn’t your trust in logic, science, even observations equally as potentially fallible?

This is actually a good question which attacks the very logical postulates that all reasoning (including religious) is based on. But these are the heavy guns. This weapon destroys both sides of the debate.
